Blackberry Crisp

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup light-brown sugar
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1 teaspoon coarse salt
  • 2 3/4 pounds fresh blackberries (5 pints)
  • 2 tablespoons instant tapioca
  • 3/4 cup granulated sugar
  • 1 tablespoon grated orange zest, plus 1/4 cup orange juice

Method:

  1. Preheat oven to 375 degrees.

  2. In a food processor, pulse flour, brown sugar, butter, and salt until combined. In a large bowl, toss together blackberries, tapioca, granulated sugar, and orange zest and juice.

  3. Pour blackberry mixture into a 2-quart baking dish. Sprinkle evenly with flour mixture.

  4. Bake until topping is golden and juices are bubbling, 50 minutes. Let cool 20 minutes. Serve warm or at room temperature.

Coconut Chia Pudding with Spring Fruits

Ingredients:

  • 48 oz. coconut milk
  • 1 cup chia seeds
  • ½ cup agave/maple syrup
  • Cinnamon or nutmeg to taste
  • Your choose of how you’d like to finish the pudding. Maybe some bright fruity coulis and mint.

Method:

  1. Combine all ingredients and whisk until seeds are evenly dispersed.
  2. Let sit to thicken over for an hour, whisk periodically to avoid clumping.
  3. Keep in mind there’s no right or wrong but ideally the texture is pudding-like. If its too thin: whisk in small amounts of chia and allow mixture to thicken before adding more. Chia is incredibly easy to work with so if the mixture is too thick: just add more coconut milk.

Berry Smoothie

A refreshing mango-berry smoothie perfect for the beginning of spring and summer!

Ingredients:

  • 1 cup mango chunks
  • 1/2 cup strawberries
  • 1/2 cup raspberries
  • 1 cup orange juice
  • 1 cup pineapple, cut into pieces
  • 2 cup ice cubes

Method:

Combine all ingredients and blend in a blender until smooth. Enjoy!

Baked Chinese New Year Cake

Chinese New Year cake is known in Mandarin as nian gao which translates to “higher year.” Eating a piece of it is supposed to improve your luck in the coming year. Similar in texture to mochi, our nontraditional version is a baked coconut cake that has a moist, almost bouncy quality.

Ingredients:

  • 2 tablespoons shredded, sweetened coconut
  • 4 large eggs
  • 1 pound sweet rice flour (about 3 cups)
  • 3 cups whole milk
  • 2 1/2 cups granulated sugar
  • 3 tablespoons unsalted butter, melted, plus extra for coating the baking dish
  • 1 teaspoon coconut extract
  • 1/4 teaspoon fine salt

Method:

  1. Heat the oven to 350°F and arrange a rack in the middle. Coat a 13-by-9-inch baking dish with butter; set aside.
  2. Place the coconut in a single layer on a baking sheet and bake until toasted and golden brown in color, about 5 minutes; set aside.
  3. Place the eggs in a large bowl and lightly beat to break up the yolks. Add the remaining ingredients and whisk until smooth, about 2 minutes. Pour the mixture into the prepared dish and bake for 25 minutes. Sprinkle with the toasted coconut, rotate the dish, and bake until the edges are just starting to brown and the top is just set (a bubble may form, but it will flatten as the cake cools), about 20 to 25 minutes more.
  4. Remove from the oven and let cool for 30 minutes before serving. Wrap leftovers tightly with plastic wrap and refrigerate.

Canned Apple Spice Pie Filling

Makes 6, 1qt homemade canned gifts and 1 mini pie for the chef
*2 quarts of filling makes one 9 inch pie, so you’ll want to give each person 2, 1qt cans.  

Ingredients
4 cups sugar
1 cup cornstarch
2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
¼ tsp. ground turmeric
1/8 tsp. ground cloves
2 tsp. salt
9 cups water
4 Tbs. lemon juice & the grated zest of 1 lemon
6 pounds apples
Canning jars and lids

Method
Begin by sterilizing your canning jars, lids & rings by boiling them in a large pot of water.
 
Next, begin to prepare your pie filling. In a large pot, mix sugar, cornstarch & spices. 

Add salt & water & mix well. 

Bring to a boil & cook until thick & bubbly. 

Remove from heat & add lemon juice & zest.

Peel, core, & slice apples.

Pack the sliced apples into hot canning jars, leaving a 1/2 inch headspace.

Fill jars with hot syrup & gently remove air bubbles with a knife.

Put lids on & process in a water bath canner for 20* minutes.

*Add one minute additional processing time for each 1,000 feet above sea level.

Brown Sesame Mustard Popcorn

Makes 4 homemade gifts in 1qt bags or about 1 gallon of popcorn

Ingredients
2 Tbs. brown sesame seeds
2 tsp. ground (dry) mustard
2 tsp. sea salt
1/2 cup popcorn kernels
8 tbs. unsalted butter (preferably clarified) or olive oil
2 Tbs. dark sesame oil

Method
In a small bowl, stir together sesame seeds, mustard & salt.

Pop the popcorn using your preferred method. (For a quick how to, check out our plain jane popcorn recipe which gives you the skinny on how to skillet pop your kernels.)

Pour the popcorn into a large bowl. 

Combine butter & sesame oil in a small bowl, stir.

Pour the oil mixture over popcorn  & sprinkle with sesame seed mixture, tossing to coat.

Macadamia Buttercrunch Popcorn


Makes
about 4 homemade gifts in 1qt. bags or 1 gallon 

Ingredients
1/2 cup of popcorn kernels (or 16 cups popped corn) 
2 cups raw, whole macadamia nuts (about 1/2 pound)
1 1/4 cups packed light-brown sugar
5 Tbs. organic corn syrup
10 Tbs. (1 1/4 sticks) unsalted butter
2 tsp. coarse sea salt
3/4 tsp. baking soda 

Method
Preheat oven to 300 degrees.

Cut Macadamia nuts in half.

Place in a single layer on a cookie sheet.

Roast for 5-10 minutes until light brown.

Lower oven to 200 degrees.

Pop the popcorn using your preferred method of popping corn. (For a quick how to, check out our plain jane popcorn recipe which gives you the skinny on how to skillet pop your kernels)

Pour the popcorn into a large bowl, and add the nuts.

Put sugar, organic corn syrup, butter, and salt in a medium saucepan.

Cook over medium heat, stirring, until mixture comes to a gentle simmer, about 4 minutes.

Stop stirring; continue cooking until mixture lightens in color, 5 minutes more.

Remove from heat; stir in baking soda.

Quickly pour sugar mixture over popcorn and nuts & toss to coat.

Transfer to rimmed baking sheets; bake, stirring every 20 minutes, until almost dry, about 40 minutes.

Let cool on sheets.

Makes
1 pie

Ingredients
1 pie shell, par-baked
3/4 cups Pecans
1/2 cup maple syrup
1/2 cup honey
2 eggs
2 oz. butter (1/2 stick)
1 Tbs. flour
1 tsp. vanilla extract

Method 
Mix maple syrup, honey, eggs, butter, flour and vanilla. 

Sprinkle pecans evenly into the pie shell.

Pour maple syrup filling blend over the pecans.

Bake at 325 degrees until bubbly, about 25 minutes.

Reduce heat to 275 and bake for an additional 5 – 10 minutes.

It will be a little jiggly, so let cool before serving.

Debbie’s Apple Crumble Pie

Pair this tasty tart filler with your own homemade pie crust
and you’ll surely delight your friends and family. 

Makes 1 pie 

Apple Filling Ingredients
6-8 nice, tart apples (Granny Smith or a blend of Granny & Gala)
1/2 cup brown sugar
1 tbs. lemon juice
1 tsp. cinnamon
Pinch of cloves
1 Tbs. brandy (optional)
3 Tbs. flour 
3 Tbs. butter 

Crumb Topping Ingredients
1 cup flour
1/2 cup sugar
Pinch of sea salt  

Apple Pie Filling Method
Peel & core apples. The, slice or dice, whichever you like.

Toss with sugar, spices & cornstarch.

Work in butter/flour mixture.

Dump into pie crust & cover with crumb topping or a top homemade pie crust.

Bake at 350 degrees for 45 min-1 hour, until brown bubbling & done. 

Crumb Topping Method
Mix dry ingredients together in a bowl.

Work butter in with your fingers & spread on top of apples.

Debbie’s Perfect Pie Crust

Makes 2 single crust pies or one double 8″ 

Ingredients
2 1/2 cups all-purpose flour
1 tsp. salt
2 sticks unsalted butter, cold
4-6 Tbs. ice water

Method
Cut the butter into quarter-inch pieces and chill while assembling the rest of the ingredients.

Put the flour & salt in a large bowl & whisk together.

Prepare the ice water like you are making yourself a drink. You don’t need to strain and measure the water until you add it.

Cut in the chilled butter using a pastry blender, or fork. Continue cutting until the flour-coated butter pieces are the size of oatmeal flakes. Stop blending and add 4 Tbs. ice water quickly and evenly.

Mix with a wooden spoon. In a dry climate you will probably need two more Tbs. to get the dough to come together. Resist the temptation to add more than that.

Using your hands, knead dough into two shaggy flat discs.

Wrap in saran wrap for an hour. During that time the dough will relax and smooth out some.
